In this work Parmentier (1737-1813) discusses different sorts of wheat, its harvest and conservation, milling, and finally bakery in general: choice of flour, utensiles, kneading of the dogh, cooking process, and a varity of breads including recepes prepared with potatoes. The work was published the same year when the scientist had planted, collected and presented to the King Louis XVI the first potatoes grown in his garden assisted by the botanist Philippe Victor Vilmorin.
Some occasional foxing, small marginal stain to last 4 leaves; one plate repaired.
